I have stocked these great high protein pancakes by Schwartz Laboratories in my kitchen for years and have discovered something awesome.  You can make cake with these babies!  Here is how you do it.

Mix up the batter by the directions on the bottle. Use a microwave safe dish (approx. 5×5) and spray it lightly with a non-stick oil.  Pour in the batter and put it in the microwave.  Since all microwaves are different, you will need to watch closely, 1-2 minutes typically.  It will start cooking from the edges in - stop the cooking when just the center looks a little soft still.  Let it stand for about 1 minute. 

Add some fruit, yogurt or just enjoy the Cake!

Other ideas when making Schwartz Labs Pancakes:

• Add fruit to the batter.
• Use sugar free syrup - don’t spoil your healthy start.
